Creamy Bacon Mushroom Thyme Chicken

I love anything with chicken. Now add some mushroom creaminess and I am in heaven. These Creamy Bacon Mushroom Thyme Chickens are delicious and really quite easy to make. I am sure you are going to love these as much as I did. You will make them again and again because they soon will be an all time family favorite.

You are seriously going to love this one. My youngest son has now claimed this as his favorite. Although my oldest no longer lives at home he was able to try these as well and was a big hit for him too.  Give this recipe a try I am sure you are going to love it.

Creamy Bacon Mushroom Thyme Chicken

Zucchini Casserole
  • Zucchini 2 lbs
  • Flour 3 tbsp
  • Baking powder 2 tsp
  • Dried basil 1 tsp
  • Salt ½ tsp
  • Eggs 3 large
  • Sour Cream 1 cup
  • Grated Cheddar Cheese 1 – ½ cup
Topping
  • Chopped Bacon 4 slices
  • Grated Cheddar Cheese
  1. Lightly grease a round 3 qt. casserole
  2. Wash the zucchini. Slice them in ¼ inch slices.
  3. Cook them for 5 minutes in 1 cup of boiling water. Drain

  4. In a large bowl combine the flour, baking powder, basil and salt.

  5. In a large bowl lightly beat the eggs. Stir in the sour cream. Blend well.
  6. Stir in the flour mixture and grated cheddar.
  7. Combine well. Add the zucchini and stir carefully to coat all the slices.
  8. Turn the mixture into the casserole.

  9. In a fry pan cook the bacon over medium heat until cooked but now crispy. Drain it.

  10. Top the casserole with the chopped bacon and grated cheese.

  11. Bake the uncovered casserole in a preheated 350F oven for 40 minutes.
  12. Allow the casserole to stand 10 minutes before serving.
– This casserole is also tasty using a combination of zucchini and yellow squash.
