Cajun Shrimp Stuffed Loaded Baked Potato

I came across this recipe a while back and have to give it a try. I was not disappointed with the result. These are down right delicious. I have made them a couple times since then and each time I make them they are a big hit. Dont expect any left overs with these, they just go to fast. Give this recipe a try as I am sure you are going to love them.

I grew up on seafood. As a young child we lived very near the ocean and seafood was probably our main dinner dish in one way or another. I think I had it some much as a child that I got pretty sick of it. When I went out on my own I never touched seafood for years.

I think it wasn’t until my 30’s that I re-developed a taste for the sea. Still a couple things I still have a hard time with but for the most part I love it. Especially any kind of white fish or shrimp. Maybe one day I will even get back out on the water and cook up my own catch.

Taco Pizza Squares
  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 1 can (8 ounces) pizza sauce
  • 2 cups Seasoned Taco Meat
  • 2 medium tomatoes, seeded and chopped
  • 2 cups shredded mozzarella cheese
  • Optional: Shredded lettuce and sour cream
  1. Unroll pizza dough and place in a 15x10x1-in. baking pan.
  2. Spread with pizza sauce; sprinkle with the taco meat, tomatoes and cheese.
  3. Bake at 400° until crust is golden brown, 15-20 minutes.
  4. Top with shredded lettuce and sour cream if desired
